"Salvatore D'Aprano was born in Formia, Italy, a small town south of Rome and by the sea. Enchanted at a young age by the culture around him, he immersed himself in everything and anything food. Through patience and practice, he learned all he needed to know, from delicate spice combinations to hearty sauces. Wanting to expand his horizons, he left his home and traveled to New York City. There he learned how to satisfy the American palette and realized he yearned for a restaurant of his own.
